New Bohemia Uptown Opens February 29

The former Louie’s Wine Dive at 800 W. Lake St. will soon spring to life as the craft beer and sausage loving restaurant. As announced this past December, the growing chain will turn the space around in just a few weeks. This will be the fourth location for the sausage and beer-centric restaurant, following Northeast Minneapolis, Golden Valley, and Mankato. Future locations will include an Eagan restaurant slated to open roughly two weeks later, says Brian Ingram, the company’s Corporate Operating Officer.

As for Uptown, Ingram says the latest New Bohemia Wurst & Bier Haus will feature a similar menu as other locations, with an emphasis on craft beer and sustainable, nitrate-free meats. Each spot carries 36 taps with 80% of those beers being locally made.

With the opening, New Bohemia is working on a partnership for the grand opening, similar to the Surly-themed opening when the restaurant came to Golden Valley in 2014. While he cannot name the partner, it will be a local craft brewery, Ingram says.

The restaurant won’t be identical to its siblings. The building will be designed with Uptown residents in mind, featuring garage doors opening in all directions in the warmer months. Area cyclists will love that the building is surrounded by bike racks, an air filling station, and a bench for emergency bike repairs.

More locations are still to come after Eagan opens doors in early March as well. New Bohemia is exploring options in Roseville, Maple Grove, and Eden Prairie, Ingram says, and has looked outward toward Rochester and Hudson as well. As they expand, the Twin Cities will remain their core, he says.
